Creamy Pasta Salad with Tribe Spicy Tomato Feta Dip

Ingredients:

  • Serves 4-6
  • Cook Time: 25 minutes
  • 1lb rotini pasta
  • Tribe Spicy Tomato Feta Dip
  • 1 ½ cups arugula
  • 1 ½ cups chopped red onion
  • 1 ½ cups halved cherry tomatoes
  • 1 ½ cups chopped cucumbers
  • 1 ½ cups corn
  • ¼ cup white wine vinegar
  • ¼ cup extra virgin olive oil
  • Fresh basil or parsley
  • Salt & pepper

Tools:

  • 1 large pot
  • 1 large bowl

Instructions:

Step 1 - Cook the pasta & prep the vegetables
Halve the cherry tomatoes, chop the red onion and cucumbers. Cook 1lb of rotini pasta. Drain and rinse under cold water.

Step 2 - Mix the salad
In a large bowl, add the cooled pasta, 1½ cups chopped red onion, 1½ cups halved cherry tomatoes, 1½ cups chopped cucumbers, 1½ cups corn, 1½ cups arugula, 1 container of Tribe Spicy Tomato Feta Dip, ¼ cup white wine vinegar, ¼ cup extra virgin olive oil, and salt & pepper. Mix until well combined.

Step 3 - Serve
Top with any fresh herb. We love chopped basil or parsley!
